Single Bevel knives are the best tool for sashimi
I was hesitant about buying this knife. I already have a great set of Global knives that I figured should meet all my needs. But I recently started making sushi and sashimi at home, and I noted that every professional sushi chef I have ever seen uses knives with a single bevel. I wasn't sure why, but I decided to try it myself. I learned that extremely narrow cutting part of the knife provides much better control for the thin-slicing required for sashimi. I''m still far from being a gifted sushi chef, but with this knife I'm cutting some pretty delectable slices.

Cuts well
I love the knife, however, the case is not designed to maintain knife when not in use, thus, other remedies are needed. As advertised the knife is razor sharp and pulls easily through tune, salmon, and typical rolls. Do not push forward when cutting as knife is sharpened to one side, thus it tends to bind on a pull/push action. Very pleased. Just wish they could have provided some form of a case to maintain when not in use.

Nice steel but dull
The knife is dull. It came in with nicks on the sharpened edge. You will need to sharpen the knife once you receive it otherwise it will not cut sushi the way it should.

Sushi knife negatives
The knife is not nearly as sharp as I wanted it to be. Also, there were no instructions included for properly sharpening the edge.
