This review is not about the seller, but the Jamon. The Jamon is tasteless. I have had Iberico de bellota for years, and this completely sub-par to any of the ones I had before. It felt like it was not aged enough time, completely bland and tastless. I never buy again from COVAP.

This is the second time I buy the ibérico shoulder ham. The first time I received a great ibérico ham acorn fed -top quality-. The second time, I have received a grass fed ibérico ham -lower flavor, lower quality- at the same price. I am disappointed. I would like to provide the benefit of the doubt to the merchant. Maybe a mistake while packing it. This one, is not worth 324 dollars… I am sorry.

This ham is exactly the same as those I had in Spanish, sweet and tasty! I like this boneless one that is much easier to slice and cut. Will buy, again!!

2023-06-03: I bought this in November 2021 (sic), and I was disappointed because, unlike the same product I had already enjoyed many times (bought in pre-sliced packets), this piece of meat was quite GRISTLY. Obviously, it cost a lot, so I was pretty bummed not to love it, and I just vacuum sealed it, tossed it in the back of my fridge, and forgot about it. Cut to last week, and I'm (FInally) cleaning out the fridge, and there it is. So I unsealed it, and much to my surprise it was still in fabulous (identical to when purchased) shape. The BAD news is this particular piece of meat reMAINS quite gristly (duh) -- I would never serve it to guests, as eating it often involves chewing and chewing and then discarding (spitting out) the gristle bits. BUT MAN, IS IT DELICIOUS! (STILL!) I've gone through quite a bit of it in the past week, and I will get my $300+ worth out of it after all, for sure. just a darn shame about all the gristle -- I will probably purchase again once I've finished this shoulder, in the hopes that not EVERY piece of meat they sell whole like this is as gristly as the one fate awarded me last time. (I know that's possible, because I can still purchase this same exact brand/product as packaged slices in my neighborhood, and never any gristle in there, ever, not even one time. and, you know, it's a natural product, so obviously "your results may vary.") Certainly Iberico Bellota shoulder remains in contention for my favorite cured pork ever, and COVAP (this) remains the tastiest brand I've tried. PS: This is REAL expensive, but so much LESS so than the little sliced packets [per oz.] it's not even funny. About half the price, I think. and now I can state with certainty that, if you seal it properly, it will apparently NEVER "go bad." (not for 18 months, at least -- & I'm guessing well beyond that.)

Let's start by saying that I'm from Spain. I've eaten a lot of jamon. Bad jamon. Ok jamon. Good jamon. And extraordinary jamon. This falls within the last category. It lasted a lot less than what I was anticipating because every time we have guests at home and we offer some, "some" ends up being a huge amount. Everyone loves it. I will definitively buy it again. I've tried their other products, and they've never let me down. Thank you!!

Well packaged and fast delivery. About the product itself, just delicious! Great taste, one of the best I have tried. Have ordered twice and both times were good. Will order again when the weather cools down.
