Q: Does this sharpener work with either one or two helical blades?

It has one helical blade. A YouTuber named Baylee Jae reviewed this very product online. In her video she took out the blade and did some demos on how well it sharpens. Hope that helps.

Q: Would this manual sharpener be difficult for children 5-8 years to use?

Based upon my 6 and 8 year old grand daughters' experience, they should have no problem. It is certainly much easier to get a good point with this sharpener than with a traditional crank version without the pencil holding jig.

Q: Can it be mounted somewhere so it doesn’t move around?

It isn't designed to be mounted. If you constructed a "holder" for the sharpener then perhaps it could. It is quite stable.

Q: Hoiw do you empty the shavings chamber? Mine came with no instructions
