- Lupin (also called Lupine or Lupini) beans are most commonly found in Mediterranean countries and across the Middle East. In Egypt, the lupin is a popular pickled snack food after being treated with several soakings in salted water over few days
- They are rich in protein, dietary fiber, amino acids, and antioxidants
- To Prepare: Soak overnight in water covering the beans then drain and rinse. Add fresh water and boil for one hour then drain and rinse. Soak in fresh salted water covering the beans for few days – changing the water daily – until the beans are no longer bitter. Taste and if still bitter soak again in fresh salted water. Store in lightly salted water
- To serve as a snack, drain desired quantity of beans, drizzle (to your taste) with lemon juice, cumin powder and ground black or red pepper
