He's an extraordinary Chef and I'd love to visit his restaurant, but his desserts are, shall I say, a bit too nouveau & 'cutting edge' for my tastes

One of my favorite pastry Chefs, Jordi Roca releases his long awaited dessert cook book in English.Never dumbed down, recipes are solid ( Do yourself and get a digital scale to do them justice, scales are cheap and worth it) . Plenty of photos and knowledge and soul are imparted.Best book in English I've bought all year thus far.

This is a beautifully done book with great layout, photography and recipes. Became fascinated by Chef Jordi from (s4 e3) Chef's Table on Netflix and this is a great deep dive into this work.

Seems ment for a house wife and not a real chef...but the flavor profiles are still interesting

Great book!

A higgledy-piggledy mishmash or information and recipes with little sense. This book doesn't know who it is aimed at, with ingredient descriptions out of a book for professionals and the most absurdly simplistic recipes aimed at beginner housewives.I'm both a professional pastry chef myself, with almost a decade of experience in London fine dining, and have been an assistant in recipe testing and photo-shooting for the highest end of British celebrity chefs. I speak from experience when I say that this book was hastily put together with very little thought (something which is far more common than you would expect in the business) and no desire to share the genuine recipes used in the restaurant (also very common).This book is a disgrace to our profession.

I was expecting a lot more from one of Spains top pastry chefs .It mostly has rustic recipes instead recipes from a 3 star kitchen

Very disappointing and inaccurate recipes and vague methods

Straight forward with some excellent new ideas.
