Amazing texture and taste - best gluten substitute I've tried
I'm very impressed with this gluten replacement. I've tried many different gums and starch polymers to make gluten free bread in the past. I have used HPMC from ModernistPantry several times in the past but saw they had this new product so decided to give it a try. I made some rolls using brown rice flour, potato starch & tapioca starch plus protein powder using I'm Free at a 1 tsp to 1 cup ratio and enough liquid to make a stiff batter. Baked this in a cupcake tin. The rolls more than doubled in volume resulting in amazing texture and structure. Flavor is excellent. I'm very impressed with this product. Kudos to ModernistPantry!
