These Ethiopian beans are hand-picked, which makes the quality rank high amongst other coffees. Processed through the wet-processing method, Ethiopian Yirgacheffe's beans are fermented for over 72 hours after having their fruit and pulp removed by the use of natural enzymes. This process allows the Ethiopian Yirgacheffe to absorb the sugars in the coffee fruit, creating a stronger full-body flavor in comparison to the dry-method of processing coffee. Ethiopian Yirgacheffe coffee beans are known for having a warm zing, which makes this coffee bean distinctive enough to rank as one of the finest. However, what makes this African coffee bean stand out is its resonant finish – a highly-flavored mix that does not overpower with an earthy taste. If you are looking for a taste of coffee history, the Ethiopian Yirgacheffe beans have everything your palate could ask for! Ethiopian Yirgacheffe Coffees are for the most part still a wild non-cultivated coffee. The cup is characterized by a citrus and floral quality with full body and an exotic earthy nature. We roast this bean at medium to medium dark. Our current batch is truly magnificent. A very complete lush and rich taste. If you must buy only one coffee from us go with this Ethiopian Yirgacheffe. You will not be disappointed. This cup of soft, fragrant coffee has a distinctive flavor that is both exotic and classic. This delicious gourmet coffee is produced in the region of Yirga Cheffe, one of the most distinguished regions of Africa. This Ethiopian coffee is wet-processed, giving it a medium intensity of spice and herb flavors. This is why we are very confident that when you buy freshly roasted Ethiopian Yirgacheffe coffee you will be treating yourself to one of the most distinctive coffees we have to offer. Roast instructions: roast this bean at medium to medium dark.

The description should say....VERY LIGHT roast!
I am a coffeeholic and absolutely go to great lengths to buy and make great coffee. Expensive drip maker, even more expensive burr type grinder so as not to burn the grounds too much (and also a much more even grind) so I know the difference after 55+ years of drinking coffee from all over the planet (started when I was 13) betwixt light, medium, dark and every shade in between! Now I've got a 2.5 lb bag of coffee that I have to mix with my go to Dominican favourite called Santo Domingo which is considered a light roast and is much darker than this stuff.Mind you,...it doesn't taste bad. In fact it is the most un-acidic coffee I have ever tasted and "therin lies the rub".....very little taste! Certainly nothing like the BS buidup they give in the description about Ethiopian Yirgacheffe being one of the most highly prized for flavor, consistency, blah, blah! I really wanted to like this coffee as I had once bought the same "type" of coffee years ago somewhere and it was quite marvelous. Next time, guess I'll order the medium roast!Hey fellow coffee lovers, I spend a small fortune in time, energy, and moola buying and trying stuff here on amazon so, if this review was HELPFUL,...well you know what to do! Many thanks!

Perfect complex flavor, low acid, big caffeine lift off
Finally. I have been on a year long quest for a high quality African bean perfectly light roasted. If you, like me, love the floral, wine and earth flavor profiles of quality light roasts along with the bigger caffeine kick, look no further. This is it. For a couple years I had a free and almost unlimited supply of freshly roasted 3 Africans from Blue Bottle. When the supply dried up, I figured it would be no problem finding something similar (or even, heaven forbid, buying from Blue Bottle). Well, it became a quest. Few roasters get light roasts right. This one does. Few markets carry light roasts and when they do the quality is poor (in my experience). Even several local custom roasters in LA, San Diego, Las Vegas and DC have disappointed. I have purchased about a dozen different "light roasted" whole beans from Amazon and another two dozen elsewhere in the past year. In all that searching, using 3 Africans as the bar setter, two coffees, in my opinion have been better. The Sidamo at Samballatte on the Strip in Vegas, and the best one I have found by a good margin -- this one. And here's the thing with me. I know the beans are important, but for what I'm looking for the roaster may be more important. So I will be trying several of RhoadsRoast offerings going forward, always seeking that perfect complex flavor, low acid, big caffeine lift off.

Excellent clean taste with lots of favour notes
I like all roast levels of coffee and I am always trying new green beans of various countries and their different regionals and the same from different suppliers. After finding a few good coffees it seems to get hard to find newer one that meet my taste preferences. The packaging label recommends roasting "to medium to medium dark." I made two roastings; a medium with some darkness, roasted to the beginning of second crack and a medium dark, roasted about mid way into second crack. Brews of both roasts tasted excellent though I preferred the lighter. Their is a cleanest to their favour that I also find in medium roasts of Kilimanjaro coffees. I made my test roasts at 120 grams using a Whirley Pop stainless popper over a Bayou Classic SP10 propane cooker. I’ll next try a light to medium roast in a Nuvo Eco ceramic roaster. Immediately after roasting I like to crunch on my beans to compare their tastes; these had a surprising amount of subtle favour notes especially compared to a nice Guatemalan that had predominately an earthy taste.

I did notice the difference in how flavorful these got in 48 hours
I roasted these med dark, then I roasted med. For my taste med got my attention. It really did take 2 days after I roasted them to develop full flavor. Other beans I have roasted I would brew sometimes next morning and they were good. I can tell you though I am impatient when it comes to waiting, but I did notice the difference in how flavorful these got in 48 hours. They were good also next morning, but really worth letting them rest.I'm not a coffee expert at all, but I do appreciate good fresh roasted coffee. These are so good, and so worth trying for yourself. Love the world of buying unroasted coffee beans and roasting yourself you can find coffee like this.

Nice, but very bland Beans
These Ethiopian Yirgacheffe beans were flat in flavor, just not my style. I roasted them in several different ways, from light to dark, I could not get the beans to exhibit more flavor. I think these would be great coffee beans for those who want a very low acidity coffee with a very mellow flavor. They do exhibit some floral and cocoa notes but it's just too bland. The aroma is great however! My best batch was to roast at City+ where some caramel tones came in.Overall, the beans are good quality but lacking in Coffee Flavors. I contacted RhoadsRoast Coffees and asked which Full Body coffee with much more flavor and they recommend the Kenya AA so I ordered it!Hopefully, I have better luck with the Kenyan.

These are great beans. We ordered the light roast to try ...
These are great beans. We ordered the light roast to try to preserve some of the subtle flavors, but I'm not sure if that worked as we had expected - the flavor notes include caramel and chocolate, and we're definitely not getting any berry or other fruit flavors. Still, we can tell that these are very high quality beans, and also very consistently sized. Nice even roast as well, so the folks at RhoadsRoast did a great job. It is noteworthy that the label they provided suggests a darker roast, more of a city roast instead of the light roast we got. The seller prepared and shipped this incredibly quickly, much faster than was quoted when we ordered, which we really appreciated. Overall, we got great, high-quality beans at a very reasonable price, roasted properly and promptly. We can't wait to order from this seller again, and might try some of their other beans or roasts.
