Ceremonial-Grade Organic Matcha Powder KimoTea's Ceremonial-grade Organic Matcha is the 1st-harvest matcha grown in our farm located in Uji, Kyoto, Japan, ground from the most tender leaves of each spring. This is the best, in terms of color, taste, USDA organic certification, and overall quality. We priced it modestly - by minimizing our cost and having direct partnership with the farm because KimoTea's mission is to make the best organic matcha affordable to us all. The traditional meaning of "ceremonial" is that a tea master offers his/her best collection as pure tea to honored guests in tea ceremony. Thus, ceremonial grade may be different across organic matcha brands. Our matcha is sold in 20g. The leaves are from the tea plant Camellia Sinensis. We use the traditional granite stone to mill the shade-grown tea leaves (tencha) into fine powder. Please note that certain 'industrial' suppliers may use metallic balls to grind the teas, which can result in the disuniform size distribution of leave particles, which in turns make the matcha not 'smooth' in taste when you drink it. We use the traditional stone-mill method (it takes over an hour to grind 20g of our matcha), which produces a uniform size distribution of matcha powder ~8 microns in size.
