Size:2.5 Pound (Pack of 1) The Black Locust tree, which is sometimes called "American Acacia," is one of the earliest trees to bloom, and thus one of the bee's first sources for nectar and pollen after coming out of winter hibernation. Much like the famed Italian Acacia honey, this honey is light, clean, and very aromatic and floral. Locust honey is perfect to drizzle over fresh goat cheese in a salad, or to sweeten ricotta or mascarpone for desserts.One of our favorite honey producers is just a few towns over from our igourmet.com offices. Hannah Perry�s family is fourth generation beekeepers, with Hannah�s great-great grandfather starting the tradition by keeping bee hives in the 1800's. The Perry�s family farm is known as Perry Apiaries and Hannah launched her brand, The Beekeeper's Daughter, when she saw a local demand for raw honey. Today Perry Apiaries has 3000 hives, which they move from Pennsylvania to Florida to keep the bees busy all winter. All the honey produced by Beekeeper's Daughter is always raw and unfiltered so it still contains all of the pollen, enzymes, propolis, vitamins, amino acids, minerals, and antioxidants naturally found in the hive.The beekeeper's test to authenticity: "When we bring our bees back north from Florida, one of the earliest trees to bloom is the Locust, and thus one of our bee's first sources for nectar and pollen. Only so many sources for bees to pollinate on are blooming at one time. We can tell as experienced beekeepers by the color and taste of the honey that it is sourced from the Locust tree". No honey should be fed to infants 12 months or younger.

Locust huh? That's acacia right?
Good value, flavor not exactly as expected. When my jar came, I noticed right off the color was darker than anticipated. Each season/harvest will naturally be different, and I understand so I won't fault producer for that, but trying to place it's qualities withing the honey realm, no great comparisons jump to mind. Sort of just, "regular"... Idk, also bought the Saw palmetto variety and that I prefer.

The taste and quality of this honey is amazing. I've ordered several jars of it... and the only problem is I eat it too fast! I completely recommend this!

Great honey rare honey but unsure of tested quality levels.
Perfect locust honey! I do wish however that it had been a little more raw, as previous locust honey purchased upstate NY was more powerful and you could actually feel it heal on the way down.

Very best tasting honey in my opinion! This is not flowery, or strong in any way. I have even used in a cup of coffee as sweetener!

Great for my Coffee and Tea
In my efforts to break away from processed sugar. I have found this honey the best for use as a sweetener in my coffee and tea and even in baking. The light flavor of this honey is perfect for this as it's flavor will not overpower your beverage or cake etc.
