Q: What is the main "sweet" chemical in "just like sugar"? it seems like most of the information out there is just corporate marketing.

I am not sure what the main "sweet" chemical is but this is the list of ingredients on the package. Chicory Root Dietary Fiber, Calcium, Vitamin C, Natural Flavors from the Peel of the Orange, and Natural Molasses Type Flavor. It is manufacture by Just Like Sugar, Inc., Las Vegas, NV 89119. The web address is www.JustLikeSugar.com and their phone number is 1-866-54SUGAR. As you can see they do not list chemical ingredients and I don't know what "Type" means in their description.

Q: Does this taste more like sugar than Erythritol or Xylitol?

Absolutely!! IMO... This is the BEST sweetener!! I have tried them all. Erythritol and Xylitol sometimes disturb my digestion, and I hate the chemical taste! Just like sugar is simply Chicory Root, which is a fibrous root, and fiber is good for you. That being said... everyone has different taste buds and chemical makeup, so things taste different to different people. I try to go with natural products, so I also use Stevia, but it has a "stevia" flavor. I think "Just Like Sugar" taste closest to Real Sugar... and when baking... I ONLY use "Just Like Sugar"!!

Q: What is the difference between the table top version and baking? the ingredients seem the same.

It's a difference of texture. It's been awhile since I bought this stuff, but I have bought both and as I recall the baking was much finer, almost like powdered sugar, whereas the table top is granulated more like regular sugar.

Q: What (if any) are the differences between the Just Like Sugar Baking Sweetener and the Table Top Sweetener? Can they be used interchangeably?

From what I've learned, the baking version might not give a clear appearance in a drink. It might cause the food to be opaque or give it a color. Taste wise and sweetness and amounts needed in recipe, the two are the same.
