Makes the best bologna. Use it with deer and pork its awesome

I seasoned freshly ground chicken thighs with this. Yummy hot dogs! The best texture was when I sous vide them. I used a vegetarian casing.

In a search to save money and make my own deli meat without a lot of work, I happened across some recommended spice packs like this one.In my recipe I use 1 block of tofu and 1.5 cups of vital wheat gluten a tablespoon of olive oil, and enough water (starting with 1/2 cup) to help make it bind. I used the amount of spice from this pack based on the weight of all my ingredients and recommendations on the package when using real meat.It came out very fragrant, just like store bought bologna, but adding spice packet more during a taste test phase didn't give a full flavor out of the mix. I'm not going to blame the spice packet, perhaps there's a missing ingredient in my recipe to give it that extra edge I taste in vegan deli meats at the grocery store. It's not salt, just depth of flavor that's missing. e.g. by itself it's very bologna like, on bread with toppings, the flavor gets lost in the jumble. I still love what I made, I just need to experiment more.Side note: I made mushroom soup last week and was missing nutmeg for the recipe. A teaspoon of this bologna mix was just right to 2lbs of mushrooms, because it does contain nutmeg. It was very good so don't limit yourself to just making bologna! Experiment!

Used this spice mix to make elk hot dogs. While the dogs came out a bit firm, the flavor was really nice. Will purchase again.

This is just an excellent spice for weiners. I used cheap 70 percent ground beef because it is fatty and every batch turns out perfectly. I bought 5 more packages.
