This is the most detailed work on the ingredients and other components of Indian cooking from a historical point of view down to the modern era that I have ever seen. It is a great achievement. It is well worth having if you are interested knowing all about this important subject, Indian Cuisine!

I should return this book, as it has a new cover but old and incomprehensible text inside. Waste of money. Bait-and-switch curse on this book company or book publisher.

Excellent information about the history of Indian food

Detailed but a bit dry
This is one of the only books of its kind on a really interesting topic, but it's more of a scholarly survey than a fun read. That's too bad because it could quite easily have been both. It's also not a great introduction to Indian food itself, because, written in India by an Indian, it presumes a basic familiarity with various dishes and native foodstuffs.Still, if you are doing some type of research project or know a fair amount about Indian cuisine and just want some hard facts about the history of food preparation and consumption in India, this is the book for you.

A good outline on the history of Indian foods
A lot of what we eat today are foods that come from the New World, which only a few hundred years ago our ancestors wouldn’t even have heard of. I bought this book to know what Vegetarian Indians ate in the absence of Potatoes and Tomatoes. While this book was amazing on the use of spices, it was less so on entire recipes. What was interesting were the chapters on food and rituals as well as food and medicine.As a recipe book, it is nearly useless, but a good scholarly work for a food historian or anyone interested in the area.

An absolute must for those wishing to learn about Indian cuisine and it's history- the research is impeccable and the information provided is indeed of a very high standard. One observation, including colored pictures instead of black and white would have been really helpful.
