Excellent Yeast for Rhubarb and Other High-Acid Wines
I used Lalvin 71B-1122 for my rhubarb wine, and it worked beautifully. This strain is great for cutting down the sharp acidity that comes with rhubarb and similar fruits, leaving the wine smooth and well-balanced. Fermentation was steady and clean, and the end result has excellent flavor development. The only tip I’d add is to start with a large, healthy starter for best results—especially with higher-acid musts. Overall, though, this yeast is a fantastic choice if you’re looking to tame acidity and bring out a refined character in your fruit wines. Highly recommended!

71B is one of the best for fruit wines
makes a nice fruity wine, moderate alcohol tolerance, and 71b does have a limited ability to degrade malic acid, so for fruits with high acidity it can help a bit. Also matures relatively quickly. One of my favorite strains, highly recommend for fruit wines.

Outstanding flavor and durability from the yeast
I used this to make mead, I have been beyond happy with it. It produces a much more refined white wine flavor to the mead changing it entirely for the better. I will always use this yeast from now on. Highly recommend for all who enjoy white wine

Dead.
All three packets were dead, would not bloom before adding. So frustrated. So tired of wasting money/time on yeast.

Would give this a negative star... Beware do not buy yeast on here......Went to make mead even after a day no results all three packets were bad and all yeast were dead. Ruined my mead after no fermentation and it started to grow mold. Wasted 150 dollars on honey down the drain. Would not buy this from amazon again.
