Oolong tea has over 1000 years of history. Its formation and development can be traced back to the Song Dynasty, where it was offered as the earliest Royal Tribute tea to the Empire. Oolong tea leaves are sun dried, after shaken gently in bamboo baskets to lightly bruise the edges of the leafs and air dried in the shade, the surface of the leaves turns slightly yellow. When the leaves are boiled in water, they roll, curl, and change color to a dark green, like a black dragon swimming in the water, hence the name Oolong, dark dragon. Oolong tea is semi fermented, with a rich taste close to Black tea, but still maintaining the health properties of Green tea.
