A lot of knife
This knife is amazing. Long enough to square up pork bellies for bacon in one cut.Excellent for large thick cuts of meat. I guess that is why it is called a butcher's steak knife.I was thinking of getting the 14" blade, but I was afraid I wouldn't be able to find a case that it would fit in.The Fibrox handle is excellent for slip resistance, and the blade is well balanced and not too heavy as to cause fatigue.Holds it's edge very well. This knife is large and sharp, so ALWAYS wear a cut resistant glove or a stainless mesh glove when using any knife while processing meat.

It's a lot bigger than I thought it would be. (That's what she said). It is very sharp, but it worked fantastic for the packer cut brisket I made last weekend. I should have maybe purchased the next size smaller, but this thing works great for large pieces of meat. We often buy prime rib roasts and cut them into steaks, and I know this thing will be perfect for that.

The best brand of knives
Im a meat cutter and my knives are my tools. This is my second Forschner my first one lasted over 14 years. I tried other brands but the Forschner works best.

Packaging/delivery was horrific. There was a thin plastic covering over the blade, which allowed the knife to cut through that and the packaging envelope, leaving the knife sticking out the side of the mailing envelope. Very dangerous! Lucky someone did not get hurt in the process! The product was slightly damaged (scratched up where it was exposed), but not enough to warrant replacement, since it will be used to debone fish and will get scratched up over time anyway. The knife is GREAT! Thanks!!!

For steaks
Get the 12" not the 10". If your serious about BBQ dont hesitate, I have lots of knives this is my primary steak cutter. 36oz is common where I'm from.good steel good handle granton is a must for speed. When cutting turky the 10" will do nicely as well.

Excellent knife!
After reading some reviews on these knives, I talked myself out of getting the 14" version. I am glad I did. The 12" knife is huge looking! But it is true, this knife cuts through large hunks of meat like butter! The handle texture allows no slipping under normal circumstances. (this may not hold true if all slimed up, I didn't test it that way) Very pleased, exactly what I wanted.
