High quality, unsmoked, can taste quite differently depending on how it is brewed.
There are lots of different opinions about what is a good mate, so I'll just explain this instead of telling you it's the "best". This is an unsmoked organic mate from Brazil. It's all leaves, very clean, no stems or powder, and is aged, but this doesn't really change the leaf appearance. Maybe it's the aging, but the caffeine content seems to be on the low side, I can have this in the evening without issue. It can be pretty different tasting depending on how you make it. They say on the bag to keep the brewing temperature below 160F. This approach gives a very "safe" flavor profile that is crisp and simple and definitely not bitter. But going up to 180F, with the leaves pre-moistened, and letting it brew seven minutes or so, gives it more edge and character like the Kraus or EcoTeas Organic, which are from Argentina, are favorites of mine, and are also pricier. This mate has really fit the bill for me for a lower caffeine version with a strong but balanced flavour.
