Mixed results, but an interesting bug
I bought this for a berliner weisse. My plan was to step this up in a 2L starter for about a week, pitch it and let it ferment for a few days before throwing the yeast in.There was a catch. It's a furious fermenter on its own. But not a lot of acid production. So my berliner weisse wasn't too sour. This strain is, per white labs, l. delbrueckii. It will ferment the wort, producing both alcohol and CO2 on its own. The white labs lacto apparently does not do this.In theory, you could use this for a nearly 100% lacto beer. As far as souring capbilities, it's not very tart at all even when held at 90F.Worth trying once, but I might check out the White Labs lacto strain in the future. Definitely worth trying for an all-lacto beer.
