I decided to use this mix to make snack sticks from a deer I harvested. For some reason, they have a lot of spice to them. I enjoy spicy foods, but didn't expect this mix to add so much spice to snack sticks. My wife and I are the only people in the house that can eat them.

Bought this and received a ton of compliments on taste and texture. Bought a second packet 2 weeks later and didn’t receive the cure packet, very disappointing to say the least.

I tried this because the reviews were generally good and I really feel like I got lucky with that decision. I was going to try to come up with my own "mix", but thought that I should try a pre-made one. I'm very satisfied with this and will be using it on my next batch. If you check out the other reviews - one person says it's not salty enough ... another says it's too salty! It's all about what your taste buds tell you.I am going to experiment with using this for a 30# batch - it was just a bit saltier than I would have liked. I'll see how that goes and then I'll have my own "rate" to go by. Some reviews also suggested some red pepper for some heat - great idea if that's what you like. I like various things a bit "hot", but I prefer my snack sticks to be flavorful, but I don't care for any "heat".One warning - Somewhere (the label or maybe the A.C. Legg website) it says to use 7 TBS/5# if you are not going to make a full 25# batch. I found that to be way off – it is too little! It should be 11 ½ TBS/5# The best way to do it is to have a small and accurate scale and do it by weight, but the 11½ TBS/5# is correct too.

Although I liked the flavor, there are no measurements for anything but 25 pounds. If you want to make less, you're on your own .

This package will make approximately 25 lbs of snack sticks (raw weight). The blend is very tasty, has a nice peppery finish to it, but is not overly spicy. I made 8lbs of uncased and 4lbs of cased sticks, at 5/8" diameter, and smoked them for approximately 6 hours per batch with hickory chips, which I feel really enhanced the flavor. The only problem I had with the A.C. Legg seasoning kit is the lack of concise directions. I found myself looking online to find more accurate and precise instructions. Other than that small hiccup, I really enjoyed this product and will definitely be reordering in the future.
