What they are specifically asking is about the BRIX content. This yields a low double digit BRIX, which is perfect for a commercial machine. You want to shoot for an absolute minimum of 8 and a maximum for 14/15. Most good commercial machines have adjustment pots where you can turn up the freezing cylinder temperature if you add alcohol or the outside temperature is high. On a super hot day, keep the machine in the shade and do not add excess alcohol.

Q: About how many frozen drinks does one bottle of this mix make?

It makes about 5 gallons worth of mix. We own a commercial margarita machine and it usually makes 50+ cups. Depending of the size of the cups.

Q: What’s the ratio of mix plus alcohol ?

I mix for about 3 Gallons in a Bunn Margarita machine. 1-1/2 gallons of water, add mix, then add your alcohol, triple sec, etc to taste.

I usually mix the 1/2 gallon slush mix with 1.5 gallon water and placed it in the fridge to cool overnight. It takes about 1.5 hour to slush compared to about 3 hours. I will only add a full 1.75 liter alcohol when everyone starts to drink because alcohol evaporate. It will take a little extra time to completely slush when adding the alcohol, but probably unnoticeable.
