I take them with me to my favorite Vietnamese restaurant and order Pho without noodles
To make them soft you need to first rinse them to wash of the packing water. Then immerse them in hot water. Squeeze the juice of one lemon and add about a teaspoon of sea salt. Stir the mixture and let sit for 30 minutes. Rinse with cold water to wash off the lemon and salt. The noodles should be soft. You can use immediately or store in a ziplock baggie. They will absorb the flavor and color of whatever sauce or broth you put them in.I take them with me to my favorite Vietnamese restaurant and order Pho without noodles. I put the kelp noodles in and enjoy! Extremely low carb and makes Pho into a really Keto friendly dish.

Over zoodles
Got sick of zoodles, squoodles, poodles and all the twirl this veggie into a noodle a while ago. Switched to the glass sweet potato noodles and loved them. They were more like noodles than any veggie. Saw these and wanted to give them a try since it is not just a starch. They were great! Little crunchier than the glass sweet potato noodles and thicker but still great! Granted if you are thinking of subbibg this for regular pasta noodles you are going to be dissapointed. They are not the sane. BUT they more closely resemble noodles than a zoodle does and you dony need to presalt and drain them for 30 min prior then sqeeze the life out of them so you food isnt sitting in a ton of water. Will buy again and again.

Outstanding
These are simply fabulous. I followed the advice from another customer reviewer, and after rinsing the contents of one package I soaked the noodles for a half an hour in hot water with the juice from one lemon and some salt. ( FYI, after you soak it, you need to rinse the noodles with cold water.) The soaking softened the noodles, which I then tossed in some homemade Keto lo mein. It was incredibly delicious. I can’t wait to try the noodles in a classic spaghetti dish.

Tasty If Cooked Right
They taste just like kelp. The consistency was a bit gummy at times, which took away from the experience for me. However, when cooked on low heat for 40 minuets or so, the consistency changes from less rubbery to similar to an al-dente pasta. I like to sauté mine with olive oil, broccoli, mushrooms, corn and grilled chicken breast. I found that it compliments those types of flavors. Beware that they clump together if you don’t soak them in water prior to cooking them. And, the gumminess hasn’t kept me from ordering more. Good luck!

Manufacturer should include customers' preparation techniques on the packaging
Looking at reviews? Good! The first time I ate these noodles it was like chewing strings of plastic. I came back to the site to leave a scathing review and got the chance to read other reviewers' comments about how to prepare them for the best results. (See comments re: baking soda and lemon juice) Now I'm converted.Note to the manufacturer: It's ridiculous that the package doesn't include these simple instructions for a better outcome. Wouldn't you want your customers to come back again and again? Also, most of the type on the packaging is very hard to read. So sad because it says 'New look, same great noodles.' Consider that redesign a waste of money and hire a graphic designer with packaging experience. And include better instructions!!!

Perfect for low carb living!
Oh. My. WORD!!!I'm in low carb HEAVEN!I've been on a Keto journey for about 6 months now. (Low carb. Medium protein. High healthy fat.)Down 50lbs & going strong. It's a lifestyle change, not just a fad diet.Needless to say, I really miss pasta every now & then. A friend recommended these kelp noodles & I tried it with chicken alfredo. My goodness! It's perfect. Zero carbs.Yes, it's not pasta and it's firm, but it compliments every sauce perfectly because it has a neutral taste.I'm a BIG FAN!!!

Don't be put off by the plastic-like texture when you open the bag.
The first time I tried to use these I couldn't stop laughing. They looked and felt like plastic noodles. When I put sauce on them, they crunched like pickles. However, after the sauce had been on a little while, they transformed into normal looking noodles with perfect taste and texture. My husband couldn't get past his initial reaction but my son, who is very skeptical of health food, is happy to eat them. I would suggest giving them time to react with your sauce before serving them to family members who aren't on board with low carb eating.I like the fact that you don't need to cook them so they're great for fast meals. Also, you don't need to use them all at once. Just put any extra in water and store in your refrigerator for up to 2 weeks.

Love having these noodles for my keto diet!
Finally, a noodle experience for keto dieters! Since I am completely intolerant of all grains and follow a keto diet, these noodles really help me to get some great nutrition while spicing up the menu. Thank you for that. I do think it is important that people prepare them ahead of time though. I rinse them well, place in a bowl with a little lemon juice and salt, massage for 30 seconds, add warm water, soak about 30 minutes and rinse again thoroughly.

It's great ONLY if you know how to prep it
Through trial and error, I managed to make this work for me during my low carb low protein day.Rinsed it a few times, put it in hot water and cover it and left it for 10 min or so, tbh I don't think it matters too much, the first time I boiled it for 20min still the same hard chewy crunchy texture. Then I went crazy and cut them all down to maybe an inch or so and mix it in a thick strong sauce, eg curry, bolognese, or pesto, or Korean hot sauce, then it tastes just like the sauce with a bit of crunch in it.My first try I treated it like a thin noodles in a mild soup and it tasted revolting... Too crunchy and chewy and plasticky.

Hugely overpriced
I feel really stupid. I paid almost £10 for one pack of these noodles. I should have paid more attention what I’m paying for. I found out that on other websites you can buy it under £3 will do my research properly next time. The noodles are quite crunchy and tasteless. Hard to portion. Worth up to £3 not more.

Are they really raw?
They are very delicious especially in the recipe I make them-curry,chilli, garlic, home made almond milk,lemon...suits my raw eating. They initially have a very mild sea scent which I dont like but once soaked in all these ingredients above ,this smell disappears . The only thing I doubt is whether they are really a raw product. I've read a statement from 2013 written by a physician that they are a derivative product of sea weed and there is no way for them to be raw . If someone knows more please leave a comment, will be greatly appreciated
