I absolutely love this curry paste! It’s wonderful because the whole family likes it. It’s not too spicy or too extreme, but you can certainly use it as a base to alter. I usually double the recipe and use two packets, I add extra ginger and a small can of tomato paste. I have made this with Greek yogurt and also one time with sour cream instead of regular cream and both times it was really excellent. We always garnish with a lot of cilantro and I like to toast sliced almonds and throw that on top as well. I like it spicy so I add fresh sliced hot peppers as it is very mild. This is great because my family doesn’t like as much spice as I do. Very healthy and delicious.
