My favorite spice - especially on scrambled eggs
I was introduced to this in a cooking class at Sur La Table, when we made bouillabaisse - the traditional French fish stew - and this is the primary spice flavor for that dish. It can be difficult to get in the US, but it is worth it. I usually buy a couple bottles at a time and store the extra in the freezer to keep it fresh. I LOVE it on scrambled eggs and in mashed potatos. It is not very hot, similar to a mild chili pepper, but has a wonderful flavor.Like all chili powders, it should be stored in the fridge, to keep it fresher longer.This is an AOC item - which means that there are very strict guidelines on where and how this product is made. If it isn't AOC labeled, you are rolling the dice on if you are really getting the true product.

Unique, warm earthy traditional French pepper
This is an amazing spice- wholly unique like saffron or cardamon, where I cannot use another spice to accurately describe it. It's a sweet, yet earthy and a very 'warm' mouthfeel without spice heat. I cure my own meats and balked at its $13 for a tiny jar price after finding it on a favorite charcuterie recipe. Once we had that jar, OMG, we used it on everything, including non-fancy cured meats. (Grilled cheese is the best!) We tracked down the variety of peppers to grow in our backyard so we could have more! However the pepper is D'OC, so 'Espelette' can only be applied to this pepper when grown in a specific region in France. (So good!) Also use in delicate cream/butter sauces (angel hair pasta, shrimp scampi) and can substitute for hotter cayenne for those with sensitivity to capsicum. (ie traditional Cajun recipes, when prepared for Russian babushkas).

I just love this pepper which gives warm heat to my cooking especially for eggs including devilled ones, dressings and chicken! Each sprinkle gives just a hint of red pepper without any sharp or bitter spice taste! If you order two it is more economical as you will find yourself using it as a go to item whenever you cook!

"Aged" pepper
I ordered this relatively expensive pepper (meant to be used sparingly, a small jar lasts quite a while) on Dec. 3, 2016 for a Christmas gift. It arrived a few days later with a "best by" date of December 2016 — which means this "direct from France" item was basically a past-shelf-life order. Very disappointing.

This pepper was an ingredient needed for a recipe. The flavor profile helped season the food I cooked on the grill.

Flavorable But Expensive
This is my second order of this pepper. I love the flavor! It's very similar to paprika but in my opinion has a lot more flavor and is slightly spicier.The downside is the price, it's certainly not cheap.Hopefully the price will drop if it becomes more popular.

I hate that I didn't discover piment d'esplette until 38 years into my life. This stuff is so flavorful and fragrant. I haven't tried other brands, but this stuff is fantastic. I put it in fresh pasta, on corn...I would really put it on anything.

Angeregt und neugierig geworden durch verschiedene Spitzenköche wollte ich die "piments d'Espelettes. Wie sollte ein kleines Pyrenäendorf als einziges Dorf weltweit so ein vielgerühmtes Produkt haben? Also bestellt und am nächsten Tag hielt ich die Packung in den Händen. Das Glas und das Etikett versprachen viel. Und tatsächlich, ich hatte noch nie so einen guten Chili. Der Geschmack ist einzigartig, fruchtig und mit einer sehr angenehmen hitergrüdigen Schärfe.Wie konnte ich nur 65 Jahre ohne diesen Chili leben? Gut, er ist teurer als anderer Chili. Aber der intensive Geschmack ist das Geld allemal wert. Nach nur wenigen Tagen ist "Piments d'Espelettes" mein Lieblingsgewürz geworden, welches ich sogar auf Spiegeleier verwende.
