So incredibly Sharp!
I also own Cutco and Bob Kramer also in SG2 steel.None of my other knives hold a candle to these. The Kramer was even twice the cost.

Superior quality
I got this as a wedding gift for my wife because she cooks a lot. It helps her so much. It's extremely sharp, does not dull, and does not rust. From my experience with it for about 6 months it's a great knife that should last a lifetime. I will update if anything changes.

Fantastic knife
My husband got me my first Enso (this Santoku) in 2020 for Christmas, and I instantly fell in love with it. I give it five stars for value because when you're used an artisan knife, you realise the 'really good' knives (you are familiar with the names, I used a set of them for ages) are inadequate. This is clearly lovingly hand made and besides being a work of art, it is wonderful to use.He said he searched for a good Japanese knife for me and came across a lot of imposters - you can see for yourself, some have the Damascus pattern 'etched' into it like a tattoo, aren't made in Japan, and aren't genuine. Be careful and read the fine print!The knife is perfectly balanced weight wise, and it is effortless to get into the groove and slice- the rocking motion is fluid and easy because it is so well made. The steel is beautiful and durable, and the handle is high quality - I joke it is an heirloom of our kingdom.I can't tell you what a pleasure it is to work with such a well made tool and last Christmas (2021) I got my second Enso SG2 - a Nakiri, which I also love, but this original has the top spot in my heart.I am an amateur home cook, but have been told I'm quite good, and I love it. Having excellent resources (knives, pans, etc) at your disposal really elevates the experience to a joy and improves the results. This is a knife for generations, and when I got my husband to try it (he doesn't cook), even to his inexperienced touch he could tell this was truly something special. Hence my gift this Christmas, I guess. =)We plan on replacing all our knives gradually with Enso ones. I can't praise this knife enough - sometimes you absolutely do get what you pay for, in a good way, and this knife is one of those items.

You Will Not Be Disappointed!
I have been using the same dull knives for 17 years. Being a home “chef,” it’s rather embarrassing that I wasn’t willing to invest in knives. But I finally got fed up struggling to peel garlic or chop an onion.So I ordered two of the Enso knives—this one and a small paring knife.Yesterday I used the paring knife and forgot it was brand new and sharp. Oh dear. Let’s just say a bit more caution will be necessary as my thumbs can attest!Not only are these knives incredibly well made, they are works of art. Someone in another review mentioned the engraved designs on the blades are not as distinct as in the photos. While this is true, I’m not disappointed. After all, we use knives to perform important kitchen prep work—not as museum displays. (Although, it’s tempting to hang them up so all my foodie friends can feel deep twangs of envy). They remind me of Samurai blades, or what I imagine those to have been like.What is stunning:—The weight of the handle; perfect to hold while slicing and chopping—The quality of the construction; solid, smooth, no wonky edges—The blade is straight, the edges perfect, no bends, chips, mistakes. And sharper than a witches tongue!!The not so gorgeous:—Nothing bad to say; but these are not crafted for the faint of heart or the every day citizen- the price of these will set you back for months to come. Which is probably why I never bought decent knives before.So in summary, if you can, if you received Christmas or holiday funds, weasel half a grand from the kid’s college fund or forgo a fancy wedding, these knives will last you a lifetime. Just watch your thumbs.
