Q: Do these work with Airsoft pistol or rifles?

Yes it does..I use it on the byrna HD

Q: how many ounces/liters of water does each cartridge service?

Each cartridge will charge up to 1 liter of water, assuming you are using a 1 liter (qt) soda siphon.

Q: Would this work with the sureplunge

Don't know the sureplunge but the CO2 cartridges are 8g and look the same (brass color notwithstanding). Check your cartridge measurements. These are 2.5" X 11/16 " (probably has to fit somewhere accurately to be used) (Of course the best would be to find somebody who says they've used it successfully with a standard 8g soda charger.)

Q: Are these the same size (will they fit in a pinch) as standard 12g CO2 cartridges or shorter OAL?

These are 8 gram vs 12 gram and therefore smaller in dimensions.Length is roughly 2.5".
