Global G-56, Classic 7 inch Vegetable Hollow Ground Knife, Stainless Steel

If I only had one knife to choose this one would be it. Reliable companion in the kitchen. Multi-purpose.

I'm not a pro but I like using quality stuff that lasts a long time. I have this knife and the 5-1/2 inch. Honestly, I bought them based on online and Amazon reviews. After several weeks of using them and getting used to them, they are my favorite and the two knives I reach for the most. The size and shape of these two are so versatile. I use them for everything. They are so sharp and hold their edge extremely well. They are light and well balanced. Makes cutting anything easier. I had other knives I loved but the wooden handles dried up and split and the plastic composite handles got sticky, melted, or cracked over time and exposure to heat and oils. The handles on the Global stay clean. They take some getting used to but they don't slip and I have not had any problems with them. Really looking forward to using these knives for a long time.

I love this knife. I’m barely anything when it comes to cooking, but I love the size, the way I can control it, the shape…I don’t really deal with meats, but this is great for cutting up and fruit and some cheeses (if you’re patient, I’ve heard putting your cheese block in the freezer helps with cutting, but I’m terrible with timing…)

It feels good in the hand and is very sharp. The back vertical edge of the knife is a little sharp when using a pinch grip. I wish that was rounded more instead of so square. I've gotten used to it for normal use but may choose a different knife for extended use.I'm happy to find that the grip is not slippery. I was concerned about a fully metal knife being slippery.

One of my husband’s friends is a professional chef and he swore by this knife for vegetable chopping. It’s superb!

I have a number of Global knives and was very surprised how easy this to use. It is very well balanced, makes chopping vegetables a cinch. This was a very worthwhile purchase, glad to have added it to my collection.

If you have never owned a global knife you're missing out. A co-worker purchased a dalstrong and this knife is twice as sharp out of the box. Well balanced and proper length for slicing and chopping vegetables. Perfect for everyday use. For the price it is fair and much cheaper than bulky German knives.

Since I cook with lots of vegetables, it's name got me from the get go. Next, I was lucky to actually test this knife at Williams Sonoma. What immediately impressed me was the balance and the weight of the knife; how it felt in the hand. It may look flimsy in the picture but I assure you, it is not.In addition to the balance and weight, the blade has a curve that lends itself well to chopping and particularly mincing. You can steady the top of the knife with a flat palm while rocking the knife handle up and down quickly for mincing without having the knife leave the cutting board. I can quickly blaze through onions and garlic now, making chopping and mincing a breeze! In fact, I can dice an onion faster with this knife than the time it takes to pull out my mini processor, toss in onion chunks, process into dice, wash the processor and put it away.And did I mention sharp? Wowza. From amateur cook to pro chef, this may very well become your favorite knife.

I love this knife. Its held an edge for ever I just re-tune it with a steel every couple weeks. Its super well balanced, no cracks to hold bacteria and its huge for even large eggplants or whatever your chopping up.

We've got a few global knifes and wouldn't use anything else. The veg knife is perfect for us, slices so perfectly and lovely to handle. I 100% recommend Global, they might seem pricer than your standard knife but they are in a different league and last a lifetime.

Ich bin GLOBAL. Messer Fan. Habe manche schon seeeehr lange, mit dem richtigen Schleifstein sind sie auch immer superscharf. Dieses Chopmesser ist großartig, der Kullenschliff tut was er soll. Das Messer liegt toll in der Hand.
