Q: There is vital wheat gluten and vital wheat gluten flour. is there a difference or are they the same thing?

Gluten is a component of normal wheat AP flour. I do not "know" the percentage of gluten by volume, but I think it would be smaller that 25% - perhaps less than 10%. If they sell the vital wheat gluten in smaller packages than when they sell the vital wheat gluten flour, I think the vital wheat gluten has been separated (refined) from flour, so it can be added to whole grain flour as a supplement for better raising. In fact, I do not "know" that any of my suspicions are correct.

Q: what's the shelf life on this prodcut, please?

Labeling on most products includes a Best By date. The packages I have say 30/06/2021 and Best By 26 Dec 2022. Best By means freshest by then. I suspect the gluten will last much longer. Keep in mind that the elements which deteriorate any foods are, temperature, light and moisture. If you keep this gluten in a cool environment away from light and moisture it should last much longer than the dates given. Consider putting the packages in a metal container with tight lid or a bucket with a gamma lid plus some desiccant packs inside. So the absolute answer to shelf life is variable and really unknown without real life experiment.

Q: Is This flour? Or do you add it to flour

It is an additive to flour to increase the gluten content of it. The vital wheat gluten gives the dough more elasticity and helps eliminate air bubbles in bread. Use it in recipes that call for yeast. It looks like flour.

Q: will this help Keto bread w/yeast rise?

It has no leavening power. It is pretty much just protein extracted from wheat. So it makes normal dough more elastic and makes stronger bubbles from the leaven.
