A little vinegar heavy.
This was a little heavy on the vinegar but the flavor was still good and a great time saver when hosting a dinner party.

Chimichurri in name only
One of my daughters and I have been experimenting with simple chimichurri sauce, which is basically parsley and garlic with olive oil and virtually any mixture of peppers to taste. To note, parsley can be used to "cure" garlic breath. Disclaimer: I am a chemist and love reading about and experimenting with food chemistry. Thus, the ratio of fresh parsley and garlic controls the taste, the peppers control the heat and add to that basic taste. This sauce is very acidic and seems as if the manufacturer used ascorbic acid (vitamin C) or citric acid to adjust the taste. It is nothing like a correct blend of parsley and garlic. As for the "heat," it is mild at best. No discernible chili taste at all.
