Santa Ninfa Orecchiette Pugliesi Italian Pasta, 1 Pound (Pack of 4), 64 Ounce

This is the third(maybe fourth ) time that I bought this great Santa Ninfa pasta.I'm from Southern Italian extraction and so I grew up on mostly home made pastas.It takes ,where I live ,about 16 minutes for 'AL DENTE" but who's counting?I also need to point out how very digestible it is. I use little home made red sauce or Pesto,I can really taste the wheat. You and your friends will love it. Having lived in Puglia for a few years, we were excited to find orecchiette available in the US. These are just like what can be found there. Of course, in Italy, we'd just buy the fresh pasta which really has no comparison. BUT! After watching a video on how to make orecchiette by hand, I decided that buying the dried ones was a much better idea. As with any pasta, don't cook it to moosh- only al dente. Excellent product!

Once you learned that suggested cooking time Is too short. They were too “al dente.” Second time I increased cooking time to 21 minutes and I thought they were perfect.

Loved the old world style packaging and the product is superior. I read other reviews that thought they were tough to cook. I had no problem, I believe they're meant to be al dente and they were. They were just right, held the sauce very well and the taste was terrific. I'd buy again....well worth the price.

Bought these on a whim to try. Made tuna noodle casserole with this pasta and loved it. Would be great for a cold pasta salad for summer or to take to a potluck. My next bag will be for spaghetti, to see if I won’t have all the sauce and meat fall off like on spaghetti noodles.

Such a better product than what I can find in our local grocery store!We think it’s worth the cost to have a pasta with a better texture.

Loving the taste of a pasta, like "Santa Ninfa Orecchiette Pugliesi Italian Pasta" is not enough to make it a winner. Using a large pot and plenty of water, I cooked this pasta for the recommended amount of time. I stirred the pasta regularly to be sure it would cook evenly as it seemed to "pool" around the perimeter of the pot. When drained, the pasta had a starchy coating that was unappealing. Further, some of the pasta was cooked through, but some had centers that were only partially cooked. This is an expensive pasta having disappointing results when cooked. I'll try again, but unless I can get this to cook evenly will stick with Barilla.
