My Mom used to make coconut cake with this. It is still awesome. I haven't been able to find it local so this was a great find.

fabulous stuff
Ancel coconut is readily available in south Louisiana where I grew up. It is wonderful when you add a bit of water (or rum) and spread over the layers of a plain old box cake mix cake. My friends all think my coconut cake is the best they've ever had! I had no idea it wasn't available everywhere until I moved away. I stock up every time I am back in Louisiana visiting family. The price here isn't too bad- its only about a dollar more per can than what I'd pay in the grocery store, and that includes shipping. UPdate- they raised the price on this by $20 since my review- I'd no longer say its attractively priced.

What? No Ancel?
I am from Louisiana and only recently moved to South Florida. When I went to the grocery store for Ancel Coconut to top a yellow cake mix, I was saddened to learn that most places here just don't carry it! I went to Wal-Mart for it and looked high and low near the cake mix isle, the canned fruits isle, and nothing! NOTHING, NOTHING, NOTHING!!! Only by accident when I passed by the Hispanic Food section did I see that beautiful blue can!!! Boy was I happy!! I make a yellow cake mix, poke holes in it while in the pan, then pour the entire contents of one can of Ancel Coconut over it, then top that with a mixture of vanilla pudding with a container of Cool Whip folded in. Boy oh boy, it's SUPER DELICIOUS!!! At Walmart is was $2.13 a can. I will be returning to Walmart soon though to stock up while the price is so low, and the product is available.
