Q: I bought these and i can still see the little dots from the led lights. is there a way to buy better covers that fit these tracks?

You actually need led strips with leds that are closer together (i.e. more lights per meter).

Q: When you say you can cut the channel does that mean also the plastic cover and what type of plastic is it? don't want it going yellow

Yes, you have to cut the channel and the cover, you will need a very small teeth saw to cut the channel and a scissor for the cover. I've installed a few fixtures using hi power led strips (9w/ft) and after more than a year not showing any color degradation on the covers.
