Holds a sharp edge, well balanced, good grip
These come lovely and sharp, they have a good shape, I like the Santoku shape, the handle grips well, even when wet, they they sharpen well and hold a good edge. Enjoy cutting tomatoes with satisfaction, this is my 3rd Mercer Culery knife, I will definitely be buying more of them.

I like the grip and feel of the knife
I have a good quality high carbon steel chef knife. My latest Which magazine issue highlighted this knife as sharp and stayed sharp. Being a boning knife the blade is considerably narrower and slightly shorter than my chef knife and therefore can be put to a different use for carving in meat and vegetables where the chef knife does not fit due to its size . It is made from high carbon steel, the handle is plastic and of good size. I had it now for a couple of days. Indeed it is sharp and ergonomic. For the price it cannot be faulted

It’s actually really good
Having spent a few years working in kitchens I’ve used/owned my fair share of knives. When ever I’m asked about kitchen knives I will always recommend mercer, the bevel you get in my opinion is as precise as you would get from any of the big names. The black Handle ones feel and look very similar to victorinox fibrox, they also have some that look and feel very much like WÜSTHOF.

I like the weight of the knife. It is sturdy yet handles well. Fits my hand well and slices sourdough bread like butter.

Super sharp bread knife
Had a twenty year old bread knife that started cutting less effectively (shocking, right?). Replaced it with this one, and all I can really say is, wow. This thing is so sharp that it constantly provides quick, and clean slicing. I didn't realize just how badly the older knife was until I used this. It can handle larger, crusty bread just as easily as softer things like rolls and bagels. If you like making your own bread, this knife is a must. If you like clean, even slices, this knife is a must. If you are tired of bagel guillotines or other kitchen gadgets, and just want a nice, sliced bagel for toasting, this knife is a must. The handle is great, with enough texture and grip that slippage is not a concern. Its length means it can easily go through artisan breads, particularly boules. No regrets whatsoever...except, wow, it is sharp. I used to be able to cut through a bagel in my hand without any concerns (maybe not the safest way to cut a bagel), but this knife, not so much. Lets just say it cuts through human skin with the same ease that it cuts through bread, but that is on the cook, not the cook's tool :)

Fantastic!
This excellent knife has been fabulous for slicing our sourdough. The tough crust is no match for this blade. Anf it is a fabulous value for the price.I highly recommend this knife
