A Useful Resource
Don't let my 3 star rating deter you. Brett Markham did a good job writing this bok and I'm not unhappy to have bought it. I think that, for the length and amount of information contained, the bok is overpriced. There's good info here and urea worth knowing, for sure. Some things are a bit incomplete. For example, Markham includes a number of jerky marinade recipes but doesn't hint at how much meat the recipes can marinate. It's probably obvious to him, but I really don't know, so I'll need to do my own research. I can do that of course, but then I guess I don't need his expertise.Quite a lot of the book is taken up with instructions for building a homemade dehydrator. I'm probably not going to do that, and if I did want to, there are lots of free plans online to choose from.That said, he's got lots of interesting suggestions for making instant-mix foods. I'll probably try some of them out.

To get the hang of how to dehydrate just about anything! Instant meals, meats, beggies, fruits and spices. Even how to build your own dehydrator.

I was not as impressed as I wanted to be by this book. I mean with the title of food dehydrating bible I thought it would be a more comprehensive collection. It is an easy read, and gives basic knowledge if you are just starting out and unfamiliar with the dehydration process.

I was looking for more of a specific product prep ...
I was looking for more of a specific product prep and cook book. A large part of the book is how to construct a food dehydrator. This would be helpful for someone who has the skill to do so.

Not what I was anticipating
I wish this book contained more recipes and more photographs. It discussed ways to dehydrate food and how to make dehydrators.

Thorough
Unlike other books I’ve found on this subject, this one actually goes into the principals and reasoning behind dehydrating more than recipes. I liked this because it gave me confidence to try my own ideas. Also it covers the different types of food you are likely to dehydrate with a chapter on each such as fruit, vegetables, breads and meats. There are recipes too, but this book is best for those people who want to understand the principles behind dehydrating so they can then use it to suit their own tastes and requirements. The only reason I haven’t given five stars is because it would have been nice to have temperatures in Celsius as well as Fahrenheit, plus a rough idea how long various foods take to dehydrate - though the author does point out that time estimations are very vague because there are so many factors involved.

Meh ... or not mehhh?
It's a reasonable enough book about dehydrating (albeit with the dreaded US weights, measures and temperatures) but leaves many questions unanswered and it's a little short on detail. Nice enough read but hardly worth the title of 'Bible'. Glad it was cheap. I won't feel bad consigning it to the heap of 'Seemed like a good idea at the time' books.
