Arrives dull, is heavy and wide
I really wanted to like this knife because I am a big fan of Global knives and am always impressed by their comfort and reliability. Unfortunately, this knife is the first time I have ever been very disappointed in a Global product.For starters, it arrived incredibly dull. This was unexpected since I've grown used to Globals being sharp right out of the box. But okay no problem, I took it to get professionally sharpened (stone, single bevel).During the pitifully short time that the knife was sharp and usable I noticed some other issues with its design. One, the knife is actually very heavy (beware if you're expecting a quick, graceful yanagi). Two, it is also very wide--so wide that it basically wedges itself into food rather than sliding through it like a good slicer.All in all, I cannot recommend this. It feels like a poorly thought-out add-on to Global's otherwise impressive lineup.

Habitué aux couteaux Global
Alors en premier lieux, il faut admettre que c'est une très très belle lame. Ayant déjà un Santoku, un Nakiri, un couteau à filet et un hachoir chinois de la marque Global, j'ai été surpris par la beauté de cette lame.Concernant le fil, il est amusant de noter qu'il n'a pas l'air aiguisé lorsque l'on passe son pouce sur l'arête. Par contre, à la première coupe (je l'ai utilisé pour trancher un tataki de dinde), on se rend immédiatement compte que ce couteau excelle pour les tailles de précisions : aucune sensation de résistance, il traverse les fibres musculaires comme si ce n'était que de la mousse.Attention cependant : c'est une lame japonaise qui n'est aiguisée que d'un coté. Il ne conviendra donc pas aux personnes habituées à couper de la main gauche.

Excellent knife had for 2 years now still very sharp it has took me 2 years to get used to it's incredible length but once you do it's incredible back and forth motion is excellent for fine slicing
