Q: Can i keep the finished dough in the fridge until the next day to cook waffles?

Yes, you absolutely can refrigerate the dough. Once the dough has risen, poke a few holes into the dough and allow the gases to escape. Cover the dough up with plastic wrap and refrigerate to use the next day. We recommend that you wait until you're ready to bake up the waffles before incorporating the pearl sugar into the dough. This allows the pearl sugar to maintain its freshness and shape rather than over-activate the yeast and dissolve overnight. Q: Is the dough supposed to be stiff and dense or light and sticky ? How king should it be kneaded?

Q: What is pearl sugar? How different is it from powdered or icing sugar? I’m American and have never heard of these waffles.....

It’s like little balls of sugar that melt down in little pockets when mixed and cooked with a waffle maker. Instead of having sprinkled sugar on top like you would use powdered sugar, this pearl sugar creates these little pockets of sugar you can taste when eating a waffle. I was in Belgium and had a Belgian waffle and this is the exact same taste and texture! So sweet and delicious!

Q: Once all the yeast packets are used can I use any brand of yeast? Or does it need to be a specific one?

If you follow the Liege waffle mix preparation instructions, the yeast provided to you should be exactly how much you will need for the 32 ounce bag of waffle mix.
