Good authentic flour
Sent securely and well packaged, large sack inside a box. Flour is very fine and when making dough had a wonderful smell. Bread made had an authentic French finish crust was crunchy and chewy..all in all a good end result. I would say that if you use this flour you may need to reduce the amount of water that is specified in recipes (Hollywood, BBC, etc) as the flour didn't need as much as say standard bread flour does, so adding the exact amount of water for a wet/sticky dough is a very gradual process after initial mixing. I started with about half the water to mix and then added small amounts allowing the dough to absorb it before adding more. The first time I used all the water specified and ended up with a far too runny, wet dough, almost pancake mixture!

Great bread flour makes great bread
So far I've made crumpets, doughnuts, "regular" bread and rolls, and sourdough bread and they have all turned out wonderfully. It's taken 3 months to get through my first sack and I'm very happy to have just received my second one. I'm going to bag it into 1kg portions in zip lock bags to keep it safe and dry. Even though bread flour has returned to the supermarket shelves I will keep buying Carr's T55 flour because I think it is a good quality flour for a very reasonable price.

Makes excellent French-style bread
I couldn't decide whether I should buy this flour or the slightly more expensive Matthews T55 flour, however since the ingredients are identical I opted for the cheaper choice and I'm glad I did. The 16KG bag easily fits into a ~30L container (or a 45L one with plenty room to spare). I've been using the flour in direct substitution for "strong bread flour" in recipes without the addition of any gluten and the results have been excellent; as good as any supermarket strong bread flour (or better). The pictured bread was made using 50% of this T55 flour and 50% semolina which I blitzed into fine flour using a blender.

Where’s the rise?
Not happy at all with this flour. I realise it’s relatively low protein at 9.5% but I’ve gone through about half the sack now & had more bad loaves than good :(I’m not by any means a novice baker & knew I’d have to adjust my hydration but this flour hardly seems to absorb water at all! However my main issue is lack of strength, even with multiple folds during rise, resulting in very poor oven spring. I've just ordered another brand with higher protein content after my 2nd Pullman loaf in a row which actually sunk! Never had this happen before. Avoid….*update 1*Think I was maybe a bit harsh in my review as my recent loaves have tasted nice and, despite sinking, quite light & fluffy. I also used it for naans last night which turned out really well. Having said that I won’t be using it for loaves anymore. Not enough strength. Strangely my baguettes were a bit heavy but could be my technique. I'll maybe use for other types of bread, scones perhaps.*update 2*So last few weeks have been using my remaining 1/2 sack of flour for lots of things instead of plain flour. Made cheese scones last week which had a fantastic, light texture. Waffles this morning which were wonderfully fluffy. Have made couple of batches of Yorkshire puddings & a cake which were all better than using ‘ordinary’ plain flour. Not what I bought it for but upped rating from 3 to 4 stars. Not trying bread or baguettes again with it though :DI'm now using a 12.5% bread flour for loaves with fantastic, consistent results.

So far best flour for authentic baguettes
I have made baguettes with different flour before and never got near a real french baguette.Using this flour my baguettes are fantastic. I’m really happy with this flour. I will order more later.Delivery took one extra day to be delivered

Makes lovely bread, usual great quality
Love this- use it for making wonderful loaves in the bread maker- lower gluten bread, I’ve just bought some more. Great value for superb quality.

Unbelievably tasty bread
Economical way to make great tasting bread. Has the authentic slightly yellow finish to the loaf, soft inside and crisp and golden crust with Panasonic breadmaker. Top buy. Sack comes in protective card box
