Dari Moroccan Couscous 1kg, 2.2lb (Medium, 1 Pack)

This is a very fine grain and delicious couscous. I do not know why the grocery stores carry only rather horrible couscous mixes full of various dried ingredients that just get in the way. Plain couscous has become nearly impossible to find. There is an entire world of flavor difference when you start with a good product. Unless you plan on using this in one meal, plan to store it in a glass jar with a tight lid as the plastic wrapping is temporary at best. Mine was carefully packaged from Amazon.

Used to live on Couscous and soup back in the 90s. Put a can of soup in a pan and bring to boil, add spices. Stir in an egg, or not. Put some Couscous in to the soup, stir. Turn the stove off and walk away for 10 minutes. Dinner. Now for some reason the local stores don't stock bulk Couscous anymore. Must be the celiac disease craze. So, this is Couscous as Couscous should be. It's marked as 'medium grain' but actually on the small side of 'medium', cooks in 5 minutes. Turns your soup and stew chewy.

Very, very finely textured couscous. Much finer than the normal couscous you buy at the store. However, it's good in soups and sauces. I haven't used it on its own.

I grew up with this couscous and to me, that is the only couscous I can use when I make Tagines or Tabouleh. The grains are very fine and fluff easily in a couple of minutes with hot water. It’s very easy to make and versatile. Season it with salt and olive oil before putting the hot water on top of it and cover it. I make it in the bowl I will serve and cover it with a plate. It’s the easiest thing ever.
