Lovely condiment
I became interested in Verjus by reading an article in a gourmet magazine. I made notes on what I should look for in regard to buying this product and even how you could make your own with green grapes. This Verjus is not a cheapy vinegar. Don't be confused about this. This product has a mellow, light, grapey taste and it begs to be embellished by herbs and oils. It has a marvelous taste. I need to experiment more with this product. I have used extra-virgin olive oil and canola oil to make dressings. I have added sour cream and mayonnaise in small parts to this Verjus to see what I could create for different salads, cucumbers, various vegetables & greens. I like this unique and earthy flavor.

Wine Substitute
Great substitute for wine if you are a non-drinker. Used it on fish recipe calling for a white wine. It was excellent. Try it.

A wonderful addition to your pantry
I love verjus and have been using it for years. It makes an excellent salad dressing, works well in stews, deglazes nicely, and can be used to make an awesome sorbet. The thing it does best though, at least for me, is to make water tastier. I add a bit to my drinking water. It gives a tart, refresing taste. Just use a little. I keep a 12 oz bottle of it at my office which lasts a full week of my refilling my water bottle a couple of times a day.Also, for those people who do not wish to cook with wine, this is a good alternative. No, it doesn't taste like wine, it tastes like itself, but it sort of works the same way.
