Can this be used to hold water at a constant boil (212F) or higher?

The set point goes up to 212oF but not higher. So It should be able to hold temp in the 211-213 oF range. I don't know if that would be a constant boil or not but it would be close.

Does this unit can use another type of probe? What type of probe uses?

What "type" are you referring? This control uses a resistance type sensor, electrical interference may affect sensor signals. when extending the connected wire a shielded type wire is recommended. and increasing the gauge is also recommended. The probe cam also be used for liquids, but should be in a well.
