Excellent full-bodied flavor and rare find
Deep, smooth, smoky flavor. This sauce is certified organic, naturally brewed, unpasteurized, and reduced sodium – a combination tough to find. The description claims it’s aged in old wooden barrels, an artisan making technique with live probiotics. I’m really no expert in soy sauce, but it’s the best tasting soy sauce I tried by far. I tasted it alongside with Kikkoman organic naturally brewed soy sauce, which is also highly rated. Kikkoman, while also very good, tastes quite flat in comparison, possibly because it’s not unpasteurized and raw. This sauce tastes very full-bodied, akin to a fine wine, and the reduced saltiness does not overpower the flavor.With regards to sodium, this is a comparison per 1 Tbsp:• Kikkoman organic naturally brewed regular sodium: 990mg• Whole Foods 365 Organic Shoyu Reduced sodium: 650mg• This sauce: 720mgSo this falls under the category of reduced sodium AFAIC.

I too will only buy this
I will never buy Kikoman again. And I'm Asian BTW. But this is the best soy sauce ever. Asians don't mess around with soy sauce or rice. We know good soy sauce when we taste it, and this is IT!

I’ve enjoyed this Nama Shoyu for years. As far as I’m concerned there’s no other brand on the market to consider!

NOT Your Usual Soy Sauce! Lower Salt, Great Flavor!
As I said in the title, "NOT Your Usual Soy Sauce!" This is 14% lower in salt than Kikkoman! Persons who have said that it is "very salty" are mistaken. At 33% it is lower than most!It has a unique flavor and color since it was aged in cedar wood casks for one year.The flavor doesn't hit you over the head but it does add umami and a unique flavor. I like that the salt is lower.I also tried Yamaroku Tsurubisihoa a popular, but expensive Soy Sauce (again, from Japan) and it is more typical, but quite robust. The two are quite different!This "Nama Shoyu" is 59% cheaper, so you can afford to use more of it and amp up its flavor.You need to try it!
