Q: how does this differ from the 36550?

Hello, There is no functional difference between 36556 and 36550. The thermometer was slightly changed in the product, but each preform the same. Thank you, Consumer Service Nordic Ware

Q: Can i put this in the oven at 500 degrees? i want to use this as a dutch oven to bake bread, but i’m unsure if it’s safe

It's purpose is a smoker. Wouldn't think it would work well for your idea. I use it over the campfire and on the stove. 190-210 degrees

Q: Can you use parchment paper in this smoker

Assuming you keep it under 451 degrees fahrenheit, I don't see why not.
