We've all seen that episode of Gourmet Makes, where Claire can't temper her chocolate and she has an emotional breakdown. These dark candy wafers offer a solution - a candy coating that LOOKS like dark chocolate and tastes vaguely like dark chocolate, but friends, it is NOT dark chocolate, nor is it a replacement for dark chocolate. Use this for those less-important chocolate projects, where you don't want to lose your mind tempering chocolate. I made my mother chocolate truffles for her birthday - four variations to be precise - and I knew that I didn't want to deal with tempering chocolate. The project was just too large, and I didn't want to mess up my mother's birthday gift. I bought these because I felt it would be a great alternative to actually dark chocolate, and in some ways, it was. It was definitely easier to handle - just pop them in the microwave, and melt them up. Unlike dark chocolate, which can burn if it is not melted at the correct temperature, these are a lot more forgiving and can handle a bit more heat. They harden beautifully and had a nice 'snap' when biting into the truffles. However, I cannot deny the fact that it DID NOT TASTE like dark chocolate, and that's why I only gave it four stars. But really - do you think these candy melts can compare to Guittard baking wafers? Absolutely not. But they still made my job easier, and only my picky palette could tell the difference. In fact, I experimented a little bit, and decided to mix in a few actually baking wafers with these candy melts, just to see how it would react. They still set up just fine, and they definitely improved the flavor. If you decide to do this yourself, just add the chocolate gradually and start with small amounts. Like I said, if you want to give yourself a break and try these in your chocolate projects, then go for it. But...they are not a true replacement for tempered dark chocolate. Review: I got these to make cake pops thinking they would be easy to use. The first bag we melted was a mess up, the chocolate was WAY to thick and wouldnt dip properly and was hard to use. After reading a lot of things on the internet, I went out and got some Wilton's ez thin dipping aid and added it to the chocolate. This made things soooooo much better. It still tasted and looked good but made it so much thinner and easier to dip. We dipped about 150 pops in about 2hours which I thought was pretty good.

Love the Wilton chocolate melts and normally they are easy to use, especially if making a small batch. These arrived all melted in to one huge lump and will have to be hammered into small pieces when making small batches. They should have been sent in some kind of insulation especially when shipped in the summer here in the south. Very disappointed. .

The texture was way to thick. I was making cake pops and melted the chocolates the way the instructions said and when I tried to put the chocolate on the cakepop I could barely even push it into the bowl. It advertised itself as a liquid on the bag but it's definitely far from liquid texture. It's more like icing texture. Also, tasting it made me want to spit it out. That's just my opinion but everyone in my family agreed it doesn't taste good. I know it looks like a good deal but it's not usable. The Ghirardelli's is pricey but it works so much better. It may work for other creations but I very much do not advise buying this product for cake pops.
