Cheddar Cheese 1 Year Aged White 40oz Half Loaf

This is our third order of this exquisite 1 year old white cheddar. This cheese is perfect for eating along with a nice glass of red wine, or for melting on a tortilla with avocado and salsa, or anything you might crave or imagine. It has a full mellow sharpness , and is hard , but not crumbly. The last time we ordered they were out of the 1 year old cheddar, so we tried the 5 year old. It is delicious as well, and a little bit sharper; but a quite a bit more salty. Our favorite is the 1 year old; though I trust any cheese from these folks is beautifully made. All five orders we have received from them have been perfectly packaged with cold packs.

The cheddar isn't too sharp and it isn't too mild. It is just right. There is an initial flavor of mellow tones to the cheese, and after it is savored for two or three seconds the slight bite of cheddar hits. The texture is pleasant, not chalky at all, not crumbly; it's a smooth firm cheese. I couldn't be more pleased with this. It certainly rises above the common grocery store options.

I feel like it’s the first time I had real cheese. Got the cheapest sharp cheddar. It doesn’t harden after melting. The amount of sharpness is perfect. Only bad thing is FedEx left it on top of my mailbox in 100 degree weather hot sun. The ice pack and cheese were both hot. BUT it’s been a week and it still tastes fantastic. I’ll be ordering other stuff to try. It’s expensive but worth it. Next time I’ll contact them first hoping to get it UPS because FedEx does really stupid things with my boxes.

I'll definitely order again. Seemed like a "creamier" cheddar vice drier. If you're familiar with Cabots sharp white cheddar, this does not have that consistency, I'd liken it more to slightly firmer than mozzarella. The taste was certainly a sharper cheddar but not so sharp as some. It still had excellent taste, so don't be discouraged from these differences. If you're looking for a salad cheddar or something that will carry a punch of flavor than this may not fit the bill. For cooking and as a standalone snack it works great.

Cheddar cheese, good quality too, from Wisconsin Cheese Mart. I usually avoid cheese manufactured in the US unless they come from craft creameries and dairy and specialty crafters. I tend favor European cheeses, especially those aged in caves or grazed from Alpine pastures. This is an exceptionally good cheddar at 1 year, pretty good with crackers or fruit, and lends itself well for omelettes, sandwiches or sauces.

Cheddar being my favorite cheese, with Swiss being a close runner up, this cheese met all the requirements I wanted prior to purchase.. Great sharpness and flavor, and what I especially like about this product is not the brick hard consistency, but rather a very small amount of softness. Price wise with this 4 lb half brick not offering a price competitive with local retail prices, (this Amazon purchase costs $9.00 per pound), however I don't like to buy cheese in 4 or 6 ounce packages, and if number of small plastic wrapped slice cheese is added up to equal 4 lbs. the retail total price will be higher than retail offerings . 4 lbs of bulk cheese presents no problem with chelf life when properly wrapped in aluminum foil and refrigerated ! I would have preferred a fairer price, say about 6 or 7 dollars a pound, which still would have presented a fair profit to Amazon, but having been a Amazon buyer for 13 years, I've learned long ago, not to expect price price fairness on Amazon, because it "ain't going to happen ".

With actually anything. We decided to try it despite the fact that it said "extra sharp" and are now on our third order as it It has a nice smooth not crumbly texture, and sharp, but, not harsh flavor. Really a great find that comes so carefully packed and shipped that shows those all along in the process take great pride. Regards

1st of all, it was well packaged and protected from the sweltering tropical heat/humidity (August in NC). Arrived quickly! Tastes wonderfully balanced, mild sharp, rich, crumbly (from ageing), melts in the mouth, never lost among other flavors. And the convenience of home delivery, ahhh!
