Just love these pans
Got it a day ago and used it today. The bread came out wonderful nice and crispy crust right around and so easy to get out of the pan once baked. It’s everything I was expecting and more.

I was reading the reviews and some of them were concerned about coating and sticking. None of it was really true. If you coat it with oil and dust some flour, the bread will not stick. I hope it helps in your case 👍

Solid pans
Great pans here..rock solid and have a bit of weight to them..the top slides on fairly easily..the pans are not flimsy by any means,they seem pretty durable..I'll be using them for as long as possible.Decent value

THE PERFECT SIZE MOLD FOR JAPANESE MILK BREAD -- WITH OR WITHOUT THE LID
I’ve spent the last 5 years making nothing but sourdough boules — the Tartine way — using only wild yeast. Then I discovered — Shokupan and Tangzhong — or Japanese/Korean “milk bread.” And I left sourdough behind.Firstly, milk bread can be made in about 2.5 hours, start to finish. Sourdough can take about 2.5 days. Secondly, milk bread can last a week or more feeling and tasting as soft and pillowy as when it first came out of the oven (shokupan and tangzhong extend the life of bread). If a sourdough boule were thrown at your head the day after it came out of the oven, it could knock you unconscious.I wasted all the words above because I want to convince you to get these two Pullman bread pans, which you will absolutely need if you start making milk bread. And you should start right away, because it couldn’t be easier or more delicious.Before I found these two Pullman pans, I was using a 17” long Pullman mold. It was huge; far too big for my family. These two pans are the perfect size. I can make just one loaf, or if I have guests coming, I can make two loaves and use both molds.Like all Pullman molds, these Cartman loaf molds have holes at the bottom for venting when you bake. Nothing sticks to these molds; and because they’re carbon steel (with a nonstick coating), they heat quickly and evenly. They come with a bonus silicone spatula and brush. I’m not sure what the spatula is for (it’s too small for scraping a big ball of dough), but the brush is ideal. Japanese milk bread is brushed either with milk and butter, or just with butter. So you’ll need a brush.[I wish I could include the perfect recipe I’ve developed for milk bread, for this size loaf pan, but I don’t think Amazon would want recipes in their reviews.][For the nerd readers, like me: The Pullman loaf gets its name from the Pullman railway company.
