Seki Ryu - Japanese Traditional Kitchen Knife

Advertised as a petty knife but shown by SekiRyu to be a paring knife this is a small knife made of stainless steel with a magnolia handlewhich is not sealed, so it's porous which allows far better grip. The blade length is 120 mm or 4 and 3/4 inches in old English, and the handle is 110mm just under 4.5 inches in length. It is quuite light in weight and the blade is thinner than the equivalent European knife. The blade is sharp but not so much as you can shave with it. I haven't yet tickled the edge up on a stone yet though.The blade is made of stainless steel with the makers mark stamped into it, and has a purported hardness of around 55-58, which is hard enoungh to take an edge but wont be as brittle as those with a harder rating.This is a lovely little knife for doing those little job, - coring apples, taking the tops out of tomatoes edtc. small and lightweight it wont tire your hands quickly. You can even do fine butchery with it, but don't expect it to go through bones!I recommend this knife to anyone who needs a small knife
