Mercer CulinaryCompetition Chef's Knife, 9,Silver

I own two…and have given away two…so far… I know there will be at least one more. (I give them to culinary school students that I know…nearing graduation.)This is essentially Mercer’s Renaissance 9-inch Chef Knife…with “competition” measurements etched into the blade. Whether or not one is allowed to use such a “measuring” device obviously depends upon the competition. That said, it’s still an excellent knife.It takes an edge well, and holds it as expected. Pound for pound, this is an excellent low-cost knife that can hold its own against most any German or Japanese made knife. (Yes, Asian knives tend to have a different angle…but they also tend to chip a bit easier. YMMV)Oh yeah, and those competition markings..? They also just look plain cool and will almost certainly fire up some excellent conversations. ;-)

Good size, and classic handle style.

The markings on the knife are a wonderful guide, but I felt the edge wasn't great so I changed it to a more acute angle of a Japanese knife and now it's just right. This is a soft knife so I don't like that I have to hone it continually, but the guides on it make it worthwhile so I can overlook some of its flaws.

beautiful knife with good reminders printed on it. it would have been nice to have the inch increments printed on the spine of the knife so i could see them as i cut, but hey... it's till a nice piece.

This is now my favorite knife in the house. Holds it's edge very well! Has handy measurements on the side. ;)

Great knife! The ruler is very helpful when you are trying to make perfect cuts.
