Excellent pasta sub
These are perfect except for the price. The texture is great and they are low-calorie. Just slightly softer than regular pasta. Better texture than any low-carb/keto pasta I've tried, including: konjac, "healthy noodles" (that's the product name), black bean, hearts of palm, zuuchini noodles, kelp noodles, immi ramen (these are my second favorite, but very high calorie). I prefer products with fewer ingredients and not a lot of math for "net carbs" like the lupini pastas and stuff like that. I was hesitant to try these because I've tried egg white wraps and absolutely hated them because they tasted too much like eggs. The sauce flavor dominates these noodles and I wouldn't guess they were made of eggs if I didn't know. As others mention, the bag is small. It's ok for a lunch serving or to mix with a lot of veggies or something for dinner. If you're lazy like me and just want to toss something in the microwave, two bags works well for dinner, and still comes in at less than 100 calories. Even with a splurge on alfredo sauce, it's a 200 calorie dinner. I prefer the spaghetti over the vermicelli because the thinner noodles clump together and are hard to separate. The price of these is outrageous, but I'm going to buy them anyway because it is so hard to find a decent low-/no-carb noodle substitute.

Healthy and Tasty
Tasty, and nutritional with about 10 grams of protein. These aren't rubbery like other noodles. They are great for spaghetti or a nice side dish with low calories and low carbs. I have family members who want to lose weight so these noodles are perfect. My brother thinks they taste better than regular pasta. I do wish they weren't so expensive, but we really can't put a price on our health.

Free of discomfort yay!
I enjoy these egg noodles way more than Konjac noodles. They have 10g of protein (Konjac has 0), though they’re more than twice the price it is totally worth it for me. Preparing, sharing, and enjoying food is a meditation and a major source of joy in my life, so I’m happy to invest in it. They absorbed the flavor of my homemade pho beautifully, and the texture was very similar to wheat-based noodles which I love, though my digestive tract does not.

Check the dates when you get them!
So the product itself was pretty good and a good really low carb alternative if you're having to keep your carbs really low. BUT, check the dates when you get them. I pulled out one of my last two packets and noticed the use by date. I ordered it the end of May 2025 and the use by date was the beginning of December 2024. So essentially was sent product that was 6 months past the use by date. I'm kicking myself for not thinking to double check the date when I got it. It was also shipped with one punctured and was rotten when I opened it not realizing initially the top was punctured. So long story short I threw away three pouches and wasted a lot of money. I hope Costco starts carrying these, I want to use them but no way I'm ordering anything like this from Amazon ever again. So the product itself is good (would give it 5 stars if you actually could use what is shipped) but be wary of ordering it on Amazon.

Bland but a decent pasta substitute
An okay alternative to the real thing. They do not soak up any flavor from sauces they are in even if cooked in them. Texture is “gummier” than other options. Flavor is very bland. But if you are eating this type of food it is edible and offers some variety

My No Carb Go To
My no-carb go to for a pasta craving. Marinating the noodles in the sauce overnight increases flavor. Conveniently easy to prepare.

So much better than konjac noodles!
There is absolutely no odor to these noodles. They are tender and easily absorb the flavors of sauces that you use on them. A bit too soft, so don't overcook them.

Great low carb protein noodles
I've only used the noodles for soup, & i can give it 5 stars for that. I also think the nutritional profile is 5 stars with 10g of protein & < 1g of carbs. Some of these protein low carb products contain too much fiber, typically of the kind that your gut bacteria digest & gives you lots of flatulence. I like that these are just pure protein from egg white. I can get my fiber from healthier raw sources like fresh fruits & veggies, which have other nutrients & antioxidants. I don't need my low carb foods spiked with low-nutrient fiber sources that give me gas & bloat. So i think this product is great. It is expensive, but I have trouble finding any low-carb high high-protein product that is cheap. They are all expensive. ADDENDUM: I tried it with tomato sauce, & the texture isn't great for that. These are better for soups & stews. Also the new pack I ordered arrived not expired, but a couple of the pouches were burst open, with the rancid liquid medium all over the poduct packaging box. The odor was noxious. I tried to do the standard Amazon refund option, but it asked me to return the product before being allowed to get a refund. How would i return an exploded rancid rotting food item, as i needed to safely discard it immediately & disinfect the area? It's stupid that the trillion-dollar company Amazon never figured out offer return options to get a refund for food that arrived rotten/rancid, without needing to send back the rotting item. I went to the help AI chat, & it gave me a refund w/o asking to return it, but i shouldn't have had to find a way to circumvent an deficiency that shouldn't have been there in the 1st place. I'm lowering my star rating for the product from 5 to 4 stars, but i've been ordering this product for a while & it was my 1st dud. So maybe its a rare occurrence.
