Q: Can this be used without the straw?

Yes. It has what I would call a short spout.

Q: Is the mouthpiece soft?

The one I received has a softer mouthpiece, not like the hard plastic you can get directly from Hydro Flask. I personally don’t like it, and am looking for a different one.

Q: Can the plastic spout/ straw mouth piece be removed for deep cleaning? like the original hyroflask straw tops?

Yes, the parts come apart for cleaning. It is easy to clean.
