I was so skeptical of powered sharpeners for my entire life but when you get older your eyes are not as good as they used to be so using stones became a progressively worse problem, so I decided to give this T1 a try and after a few tries I was able to dial it in, I cook professionally so having a few knives is an understatement and sending them out to be "sharpened" I found out is NOT a good option, they grind them and leave terrible edges (sharpenters) and even damage your knives. this is hands down the best sharpening tool I have ever used, I was so impressed by the results I used it to Sharpen my ZWILLING KRAMER - EUROLINE STAINLESS DAMASCUS knives with stunning results, the 2 Kramers I own were just under 1k for both so I was hesitant but have no fear this machine is absolutely the best ever! beyond razor sharp results in minutes. this machine should be in every kitchen and will be traveling with me on my larger catering events its just that dang good. just buy it ! .

Not as good as if I hone a blade, but way faster and perfectly serviceable for good Wustoff and Myabi knife sets. The wheel is not quite in round so I need to be careful when honing (expect more for 375 USD).

This works SO well. I had considered larger models as well as alternatives like the considerably more expensive wicked edge system. I also have a great set of quality Japanese sharpening stones. I found that they took so long to use that I tended to sharpen knives infrequently. The tormek is SO FAST AND EASY. Nothing to stop you from just turning it on and giving a knife a quick touch up. Even our cheap beater knives are like razors now. Unbelievable. And so versatile with regard to knife shape, angle, size, length, etc. Best possible choice. My sharpening stones are now expensive paper weights. We used to take our knives in for service at a specialist shop / knife maker who sharpened them on progressive belt sanders. This honestly works even better and over time will cost less. We used to pay $1/inch. Well, well worth it and will pay for itself in no time.

First off, this thing is solid! Great build quality, is easy to use but most importantly delivers a beautiful edge. Only extra step needed was a few passes on my leather strop and it was butter smooth. The sharpener is very quiet and with an adjustable edge angle it is versatile. The price is high, but the build quality, ease of use and performance all make up for that. I will be able to hand this down to my kids, definitely a generational tool unlike most things made these days. I’ve seen negative reviews about its performance but now after using it myself I am convinced it’s 100% user error if you don’t get a good edge with this. It has a learning curve like most things so take your time and practice on a couple cheaper knives first.
