Q: What are the ingredients?

Straight from the lid in front of me...Black Truffles (5%), Water, Mustard Seed, Vinegar, Black Truffle Oil, Salt, Acetic Acid

Q: Is this jar supposed to pop open? My jar appears to not be sealed although the paper is in tact.

I can’t remember if mine did, but as a general rule it should have some resistance and a slightly indented top. I would not use it.

Q: how much black truffle is in this mustard? The label seems to indicate that is it just truffle flavour. Please clarify?

The label says 5% black truffles, which seems like a lot, but you can see the truffle pieces (or at least black stuff that looks like truffle pieces—haven't had them analyzed) clearly through the jar. We've tried quite few truffle mustards and this one has the strongest, most complex truffle aromas and flavors of any that we have tried.

Q: By what process is the black truffle flavoring achieved. Why is it necessary?

Black truffle flavoring is a synthetic additive that imitates the flavor of actual truffles. I make it a point of never buying any product that has it.
