A Fascinating Look At La Mère
You can never read too many cookbooks. This one is a treasure. Eugénie Brazier is the only woman to win six Michelin stars for her restaurants. Although the recipes in this book are not written in the way we today are accustomed to, it's still possible to learn from her methods and ingredients. Unfortunately, La Mère was able to source fresh ingredients from the Lyon countryside; we no longer have such fresh food available to us and it obviously affects the flavor of the dishes. The story of her life is well worth reading, her rise from a farm girl to the woman who fearlessly ran restaurants and trained many now famous chefs. This is a must have addition to any cookbook collection.

Amazing book
Great recipes book but not only recipes, lots to learn about Eugenie Brazier. I definitely recommend, it probably is the best book about her and her recipes that is available in english.

French cooking made accessible
Part biography, part historical cook book, "La Mere Brazier" makes French cooking doable. I have stacks of cookery books. Some are filled with recipes that sound tasty but not even remotely possible for me/my kitchen/my grocer. There a many recipes in this book that can be done with relatively modest resources in a small kitchen. Many of which were made by La Mere Brazier over a wood stove without running water in rural France. While I cannot do "Crayfish in their Jus" I can do many of the 18 egg dishes on offer. I am sorely tempted to buy a small jar of truffles just to try truffle crepes. But I can't see me making the cake of chicken livers any time soon.

The Mother of French Cooking
La Mere Brazier is a demanding, hard working, tough as nails task master. Her attention to detail, and uncompromising standards are the foundation of fine French cuisine. If you hunger for the source, you've found it.It also magical nourishment for the soul. Being afforded a glimpse is a delicious treat for anyone interested in who taught the great chefs of France. Look no further you've found her!

An excellent reprint of a classic. An excellent book for the more advanced book as the recipes take a little savy about cooking.
